  • 1 tablespoon balsamic vinegar
  • 1 pound linguine
  • 2 large bunches Swiss chard, (about 12 cups)
  • 3 tablespoons extra-virgin olive oil
  • 12 ounces bacon
  • very large red onion (about 6 cups)
  • 2/3 cup grated Parmesan cheese

Cook linguine in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain, reserving 1 cup pasta cooking liquid.
