Baked Eggs Benedict

Ingredients

  • ¼ cup butter
  • ¼ cup flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon fresh ground black pepper
  • 2 cups milk, heated

    • ½ cup white wine
    • 2 cups swiss cheese, grated (about 8 ounces)
    • 4 English muffins, split
    • 2 tablespoons unsalted butter
    • 1 (6 ounce) package Canadian bacon, sliced
    • 8 eggs
    • 1 cup corn flakes, crushed
    • ¼ cup unsalted butter, melted

1 For Sauce: Melt butter in heavy saucepan over low heat. Add flour and cook; stir for 1 minute. Stir in salt, paprika, nutmeg and pepper until well blended. Stir in milk.
