Baked Eggs en Cocotte with Basil Recipe

Ingredients

  • Buttered toasted whole wheat or white bread
  • ¼ cup chopped basil
  • Salt and freshly ground pepper
  • 4 tablespoons unsalted butter
  • 8 large eggs
  • 8 teaspoons extra-virgin olive oil
