Baked Pears in Maple Syrup and Apple Brandy


  • 1 ½ cups pure maple syrup
  • 6 firm-ripe Bosc pears with stems
  • 3 tablespoons sugar
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons Calvados or other apple brandy, or to taste
  • 2 tablespoons unsalted butter, cut into pieces
  • 1 cup chilled heavy cream
