  • 2/3 cup crumbs from amaretti cookies (Italian macaroons) or almond biscotti
  • 1 large egg yolk
  • 3 tablespoons unsalted butter
  • 2 tablespoons almond liqueur
  • 1 cup whipping cream
  • 5 firm but ripe pears
  • 6 tablespoons fresh lemon juice
