Baked Sweet Potatoes Stuffed with Cranberries, Pears, and Pecans

Ingredients

  • 1 cup dried cranberries
  • 8 8-ounce red-skinned sweet potatoes (yams)
  • ½ teaspoon salt
  • 6 ½ teaspoons balsamic vinegar
  • 4 teaspoons golden brown sugar
  • 4 teaspoons fresh ginger
  • 1 cup pecans
  • + 2 more ingredients
    • 2 large firm but ripe pears
    • 4 tablespoons butter

Position rack in center of oven and preheat to 350°F. Line baking sheet with foil. Pierce potatoes in several places with fork; place on prepared baking sheet.
