Baked Ziti with Eggplant Recipe

Ingredients

  • 2 firm eggplants, about 1 ½ lb each
  • coarse salt
  • 2 tbsp olive oil
  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 28 oz canned crushed tomatoes
  • 1 tsp Italian seasoning
  • + 4 more ingredients
    • 1 tsp crushed red pepper flakes
    • 8 oz whole wheat ziti or penne
    • 4 oz fresh mozzarella, sliced thinly
    • ¾ cup part-skim ricotta

1. Preheat oven to 400 degrees. Peel the eggplant and cut it into 1-inch cubes. Toss with 1 tbsp olive oil and salt, to taste.
