Baked Ziti with Eggplant Recipe
Ingredients
- 4 oz fresh mozzarella, sliced thinly
- ¾ cup part-skim ricotta
- 8 oz whole wheat ziti or penne
- 1 tsp crushed red pepper flakes
- 1 tsp Italian seasoning
- 28 oz canned crushed tomatoes
- 4 cloves garlic, minced

- 1 small yellow onion, diced
- 2 tbsp olive oil
- coarse salt
- 2 firm eggplants, about 1 ½ lb each
1. Preheat oven to 400 degrees. Peel the eggplant and cut it into 1-inch cubes. Toss with 1 tbsp olive oil and salt, to taste. Spread over a parchment paper-lined baking sheet and let roast for 25-35 minutes, or until browned, tossing once halfway through. Set aside. 2. In a large saucepan over ...
