Ingredients

  • 1 ½ teaspoons baking powder
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • 1 large egg
  • 3 tablespoons canned cream of coconut such as Coco Lpez (not coconut milk)
  • 1/3 cup confectioners sugar
  • ¾ cup very ripe bananas
  • + 9 more ingredients
    • ½ teaspoon salt
    • ½ cup unsalted butter
    • 1 teaspoon dark rum
    • ¾ cup light brown sugar
    • 3 ounces cream cheese
    • ¼ cup sour cream
    • 1/3 cup sweetened flaked coconut
    • 3 tablespoons unsalted butter
    • ½ teaspoon vanilla

Put oven rack in middle position and preheat oven to 350°F. Lightly butter and flour a 9-inch round cake pan, knocking out excess flour.
