Ingredients

  • 2 cups milk
  • 1 large ripe banana, mashed
  • 2 cups whipping cream
  • 16 teaspoons sugar, divided
  • 2 ½ tablespoons maple syrup
  • 2 cups whipping cream
  • ¼ teaspoon banana extract

    • 12 large egg yolks
    • 1 large ripe banana, mashed
    • 1/3 cup sugar
    • 1/3 cup sugar
    • 12 large egg yolks

Combine first 5 ingredients in a heavy saucepan. Cook over medium heat, stirring constantly, 11 minutes or until sugar dissolves and mixture comes to a simmer (do not boil). Cool 5 minutes.
