Ingredients

  • 3 firm-ripe bananas
  • 1 tablespoon light corn syrup
  • 1 tablespoon butter
  • 3 cups toasted pecan halves, divided
  • Pastry cream
  • Nut meringues
  • 2 tablespoons butter

    • Pinch of salt
    • ¼ cup whipping cream
    • 1 cup sugar
    • ¼ cup sugar
    • ½ vanilla bean, split lengthwise
    • Banana caramel
    • 6 large egg whites
    • 3 tablespoons flour
    • ¼ teaspoon salt
    • 2 tablespoons cornstarch
    • 1 cup whipping cream
    • 4 ripe bananas, chopped
    • 4 large egg yolks
    • 1 1/3 cups sugar, divided
    • 1 cup whole milk
    • Assembly

1. Make banana caramel: In a medium saucepan, bring sugar, corn syrup, and 1/4 cup water to a boil over high heat (do not stir).
