Banana Tartlets with Chocolate Custard

Ingredients

  • 6 tablespoons golden brown sugar
  • ½ teaspoon salt
  • 2 tablespoons sugar
  • 4 large egg yolks
  • 1 ¼ cups whole milk
  • 2 ounces bittersweet (not unsweetened) or semisweet chocolate
  • 1 tablespoon dark rum
  • + 8 more ingredients
    • 1 ½ tablespoons cornstarch
    • 1 pinch salt
    • ¼ cup water
    • ¼ cup sugar
    • 2 ¼ cups all purpose flour
    • 3 medium bananas
    • Whipped cream
    • ¾ cup unsalted butter

For custard: Whisk egg yolks, sugar, cornstarch and salt in medium bowl to blend. Bring milk to simmer in heavy medium saucepan. Gradually whisk hot milk into yolk mixture.
