Barbecue Tofu Stir-Fry

Ingredients

  • 1 (15-ounce) package extra-firm tofu, drained
  • 1 head bok choy, trimmed and thinly sliced (about 7 cups)
  • 1 (4-ounce) package gourmet mushroom blend or 1/2 (8-ounce) package presliced mushrooms
  • 2 teaspoons peanut or vegetable oil
  • 3 cups hot cooked long-grain rice
  • ¾ cup ASIAN BARBECUE SAUCE
  • 1 cup packaged shredded carrots

Wrap tofu in several layers of paper towels; place in a shallow dish. Place a weight over tofu. Let stand 10 minutes.
