  • ¾ teaspoon salt
  • 2 cups corn
  • 1 ½ tablespoons red-wine vinegar
  • ¼ teaspoon sugar
  • ¼ teaspoon black pepper
  • 3 Belgian endives
  • 1/3 cup olive oil
