Barley Corn Salad

Ingredients

• ½ cup(s) thinly sliced green onions
• 1 large tomato, peeled or unpeeled, chopped
• salt and pepper
• ¼ cup(s) fresh cilantro, minced
• 2 clove(s) garlic, peeled
• 3 tablespoon(s) white wine vinegar
• ¹/₃ cup(s) olive oil
• + 6 more ingredients
• • 1 fresh jalapeños, seeded, minced
  • *May substitute a 10 oz. package of frozen corn, cooked and drained.
  • 1 cup(s) barley (instant)
  • 2 cup(s) fresh corn, cut of cob (3 or 4 medium ears of corn)
  • ½ teaspoon(s) ground cumin
