Barley Corn Salad

Ingredients

  • ½ cup(s) thinly sliced green onions
  • 1 large tomato, peeled or unpeeled, chopped
  • salt and pepper
  • ¼ cup(s) fresh cilantro, minced
  • 2 clove(s) garlic, peeled
  • 3 tablespoon(s) white wine vinegar
  • 1/3 cup(s) olive oil

    • 1 cup(s) barley (instant)
    • 2 cup(s) fresh corn, cut of cob (3 or 4 medium ears of corn)
