Basic Buttermilk Pancakes

  • Vegetable oil or butter for the pan or griddle
  • 1 oz. (2 Tbs.) butter, melted
  • 10 oz. (2-¼ cups) unbleached, all-purpose flour
  • 2 large eggs
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1-½ tsp.baking powder
  • + 2 more ingredients
    • 2-½ cups buttermilk
    • 1 Tbs. plus 1 tsp. sugar

Mix the flour, baking powder, baking soda, and salt together in a large bowl. In a medium bowl, thouroughly combine the buttermilk, eggs, butter, and sugar.
