  • 2-½ oz. (6 Tbs.) cold vegetable shortening
  • 2-½ oz. (5 Tbs.) cold unsalted butter, cut into 10 chunks
  • 6-¾ oz. (1-½ cups) unbleached all-purpose flour
  • 1 tsp. granulated sugar
  • ¼ tsp. table salt

In a large bowl, stir together the flour, sugar, and salt. Using a pastry blender or two knives, begin to cut the butter into the flour.
