  • 1 small onion (about 6 ounces), peeled
  • 2 pounds baking potato, peeled
  • ¼ cup chopped fresh flat-leaf parsley
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon freshly ground black pepper
