  • 1 ½ cups buttermilk, shaken before using
  • 2 large eggs
  • 1 teaspoon fine salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoons granulated sugar
  • ¾ cup all-purpose flour

    • 1 ¼ cups finely ground yellow cornmeal
    • 8 tablespoons unsalted butter (1 stick)
