  • 9 tablespoons (4.5 ounces or 128 grams) unsalted butter
  • ¾ teaspoon (2.4 grams) instant yeast
  • 35 tablespoons unbleached all-purpose flour (use only Gold Medal, King Arthur, or Pillsbury)
  • 1 tablespoon (0.5 ounces or 14 grams) butter
  • two 8 ½-in-4 ½-inch loaf pans
  • a baking stone or baking shee

    • scant 1 ¾ liquid cups (14.3 ounces or 405 grams) water
    • 2 ¼ teaspoons (15 grams) salt
    • ¼ cup (1.5 or 40 grams) dry milk, preferably nonfat
