Basil Pesto Pasta with Zucchini and Mint

Ingredients

  • 2 small zucchini, thinly sliced
  • ½ teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil
  • ¼ cup fresh mint leaves, torn
  • This recipe goes with Basil Pesto Pasta

Heat the oil in a skillet over medium heat. Add the zucchini, salt, and pepper. Cook, stirring occasionally, until tender, 4 to 5 minutes. Stir in the mint leaves. Spoon over the pasta with basil pesto.
