Basmati Rice Dressing with Dried Fruit, Toasted Almonds, and Coconut

Ingredients

  • ¾ cup (3/8 lb.) butter
  • 2 teaspoons grated fresh ginger
  • ½ cup chopped green bell pepper
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cardamom
  • 2 teaspoons salt
  • 2 cups chopped onion
  • + 12 more ingredients
    • ½ teaspoon ground cinnamon
    • 2 teaspoons curry powder
    • 1 cup dried unsweetened flaked coconut
    • 1 teaspoon grated orange peel
    • 2 cups dried apricots, cut into quarters
    • 2 cups brown basmati rice
    • ½ cup chopped red bell pepper
    • 1 cup dried sweetened cranberries
    • 2 teaspoons minced garlic
    • 1 teaspoon grated lime peel
    • 1 teaspoon pepper
    • 2 cups slivered almonds

1. Preheat oven to 350°. In a 2- to 2 1/2-quart pan over high heat, bring 3 1/2 cups water and the rice to a boil.
