Beet Moutabel with Tahini and Toasted Orange Peel
Ingredients
- 2 tablespoons Greek-style yogurt
- 2 tablespoons tahini
- juice of ½ lemon
- finely chopped zest of 3 oranges
- sea salt and freshly ground pepper
- 2 tablespoons olive oil
- 5 medium beets (about 1 pound), scrubbed clean
