Beet Napoleons

Ingredients

  • 1 ½ pounds small red and/or yellow beets
  • 6 ounces goat cheese, at room temperature
  • 1/8 teaspoon kosher salt
  • ¼ cup Chive Puree (optional)
  • 1 ½ pounds small red and/or yellow beets
