Beet Napoleons


  • 1/8 teaspoon kosher salt
  • 6 ounces goat cheese, at room temperature
  • 1 ½ pounds small red and/or yellow beets
  • ¼ cup Chive Puree (optional)
  • ¼ cup finely chopped fresh chives
  • 1/8 teaspoon black pepper

Heat the oven to 400° F. Place 3 of the beets on a large sheet of foil and wrap tightly. Repeat with the remaining beets. Roast until tender, about 1 hour. Let cool for about 10 minutes.
