Beet Pickles 10


  • 1 teaspoon(s) allspice
  • 2 cup(s) water
  • 2 cup(s) vinegar
  • 2 cup(s) sugar
  • 1 gallon(s) beets
  • 1 tablespoon(s) cinnamon or pickling spices
  • 1 teaspoon(s) cloves

Select young tender beets. Cook until tender. Dip in cold water and peel. (Cut up if necessary.) Boil water,sugar, vinegar and spices for 10 minutes. Pour brine over beets. Pack in sterilized jars and seal. Process pints and quarts 30 minutes in a boiling water canner.
