Beet Pickles 6


  • 2 cup(s) sugar
  • 1 tablespoon(s) whole allspice
  • 1 ½ teaspoon(s) salt
  • 2 stick(s) cinnamon
  • 3 ½ cup(s) cider vinegar
  • 1 ½ cup(s) water
  • 3 quart(s) small beets - cooked & peeled

To cook beets: Wash beets and leave 2" of top and tap roots (at bottom). Cover with boiling water and cook until tender. Drain and cool. Skins can be slipped off with fingers.
