Beet Pickles


  • 12 whole cloves
  • 2 sprigs fresh dill
  • 1 cup water
  • 2 cups cider vinegar
  • 5 pounds fresh beets
  • 2 cups sugar
  • 2 bay leaves
  • + 1 more ingredients
    • 2 (3-inch) sticks cinnamon

Leave root and 1 inch of stem on beets; scrub well. Place in a large stainless steel saucepan; add water to cover. Bring to a boil. Reduce heat; cover and simmer 35 minutes or until beets are tender.
