Beet Pierogies


  • 2 cups all-purpose flour
  • ½ cup water
  • 1 egg
  • 2 teaspoons margarine
  • ¼ cup finely chopped red onion
  • 1 ½ cups peeled, chopped beets

1. Place the beets and onion into a saucepan over medium heat; add about 1/2 cup of water, bring to a boil, and reduce heat to low. Simmer until the beets are tender, about 15 minutes.
