Best Blueberry Muffins


  • 2 T. butter for topping
  • 2 c. frozen blueberries
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. flour (I prefer King Arthur's white whole wheat) Plus 1T. extra for tossing frozen blueberries
  • 4 T. lemon juice concentrate
  • + 4 more ingredients
    • 1 c. turbinado sugar. (plus 2T extra for topping)
    • ½ c. canola oil
    • ½ c. milk (I used 2%)
    • 2 large eggs

Keep berries in the freezer until needed. In large bowl mix eggs, milk, lemon juice, oil, and sugar until smooth. In separate bowl mix flour, baking powder, salt, and cinnamon.
