Ingredients

  • 1 box(es) powdered sugar
  • 2 teaspoon(s) Vanilla
  • 1 stick(s) butter
  • 1 package(s) cream cheese (8 ounce pkg.)
  • Frosting
  • 1 cup(s) sweetened coconut flakes
  • 1 cup(s) raisins
  • + 11 more ingredients
    • 1 cup(s) walnuts
    • 1 ¼ cup(s) oil
    • 2 cup(s) sugar
    • ½ cup(s) crushed pineapple/drained
    • 4 eggs, unbeaten
    • 3 cup(s) carrots, grated/loosely packed
    • 1 teaspoon(s) vanilla
    • 1 teaspoon(s) cinnamon
    • 2 cup(s) flour
    • ½ teaspoon(s) Salt
    • 2 teaspoon(s) soda

Mix first 9 ingredients together. Do Not Beat. Add nuts, raisins, coconut and pineapple, not beating. Pour into a Greased and floured 9 x 13" pan. Bake at 350° for 40 minutes. Cool on wire rack. Mix all ingredients for frosting until well blended and cover cooled cake.
