Better Bean Burrito

Ingredients

  • 1 can (15.5 oz) black beans
  • 1 green pepper
  • 4 whole-wheat tortillas
  • 1 red bell pepper
  • 1 small onion
  • 1 Anaheim pepper
  • 2 tomatoes
  • + 3 more ingredients
    • 2 cups romaine lettuce leaves
    • 1 teaspoon corn oil
    • ½ cup shredded Monterey Jack cheese

In a nonstick pan, sauté onion and peppers in oil until soft, 5 to 7 minutes. Add beans and simmer, covered, 5 to 7 minutes.
