Ingredients
- ¼ cup plus 1 tablespoon extra-virgin olive oil
- 1 large porterhouse steak, about 1 ½ pounds and 2-inches thick, at room temperature
- Salt, preferably gray salt
- Freshly ground black pepper
- 3 large red onions
- 1 tablespoon minced garlic
- 1 tablespoon finely chopped fresh thyme leaves
