Black and Blue Crab Cakes
Ingredients
- 1 tablespoon Blackening Spice
- ¼ teaspoon Worcestershire sauce
- 1 pound fresh jumbo lump crabmeat, drained
- ¼ teaspoon hot sauce
- 1 ½ teaspoons Old Bay seasoning
- ¼ to 1/3 cup fine, dry breadcrumbs
- 2 tablespoons sour cream

- 2 tablespoons Dijon mustard
- 6 tablespoons clarified butter
- Reddened Butter Sauce
- 2 tablespoons fresh lemon juice
- 1/3 cup mayonnaise
Sprinkle breadcrumbs over crabmeat in a medium bowl. Stir together mayonnaise and next 7 ingredients in a small bowl; pour over crabmeat mixture, and toss gently.
