Black Bean and Corn Salad (or Salsa)


  • ¼ cup(s) fresh lemon juice (approximately 1-2 lemons)
  • ¼ cup(s) fresh cilantro, chopped
  • ¼ cup(s) onion, finely chopped
  • ¼ cup(s) red wine vinegar
  • 2 teaspoon(s) Dijon mustard
  • 1 teaspoon(s) cumin
  • 1 ½ tablespoon(s) olive or canola oil

    • 30 ounce(s) canned black beans, drained and rinsed
    • 2 cup(s) frozen corn
    • 15 ounce(s) canned chopped tomatoes, drained
