Black Bean & Goat Cheese Quesadillas with Guacamole
Ingredients
- 15-½-oz. can black beans, rinsed and drained
- 1 tsp. ground cumin
- Kosher salt and freshly ground black pepper
- ½ cup chopped fresh cilantro
- 1 large or 2 small ripe avocados, pitted and peeled
- 3 to 4 oz. fresh goat cheese, crumbled
- 6 flour tortillas, 8 inches across

- 1 small yellow onion, finely chopped
- 2 tsp. fresh lime juice; more to taste
- 1 tsp. chili powder
