Black Bean & Goat Cheese Quesadillas with Guacamole

  • 15-½-oz. can black beans, rinsed and drained
  • Kosher salt and freshly ground black pepper
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 2 tsp. fresh lime juice; more to taste
  • 3 to 4 oz. fresh goat cheese, crumbled
  • ½ cup chopped fresh cilantro
  • + 4 more ingredients
    • 1 large or 2 small ripe avocados, pitted and peeled
    • 1 small yellow onion, finely chopped
    • 3 Tbs. olive oil
    • 6 flour tortillas, 8 inches across
