  • 8 tablespoons unsalted butter
  • 1 garlic clove
  • 5 tablespoons extra-virgin olive oil
  • 6 6-ounce black cod fillets with skin
  • ½ cup good-quality sweet Sherry
  • Freshly ground black pepper
  • Roasted Sweet-and-Sour Onions
