  • 1 ½ teaspoons olive oil
  • 1 large egg white, lightly beaten

  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon ground cumin

    • ½ teaspoon bottled minced garlic
    • 1 tablespoon finely chopped onion
    • ¼ cup dry breadcrumbs
    • 1 (15.8-ounce) can no-salt-added black-eyed peas, rinsed and drained
