Black-Eyed Pea Patties with Garlic Pepper Salsa

  • 2 teaspoons fresh lime juice
  • 1 tablespoon olive oil, divided
  • 1 large egg
  • 6 tablespoons chopped fresh cilantro, divided
  • ½ teaspoon kosher salt, divided
  • 3 garlic cloves, minced
  • 1 ½ teaspoons ground cumin
  • + 4 more ingredients
    • 2 (16-ounce) cans black-eyed peas, rinsed and well drained
    • 2 serrano chiles, seeded and finely chopped
    • 1/3 cup finely chopped red bell pepper
    • 2 cups chopped tomato
