Black Forest Cheesecake Parfaits

  • 6 ounces 1/3-less-fat cream cheese
  • ¾ cup chocolate wafer crumbs (about 15 cookies; such as Nabisco's Famous Chocolate Wafers)
  • 2 tablespoons fresh lemon juice
  • ½ cup sugar
  • 4 cups frozen unsweetened cherries
  • ½ cup black cherry preserves
  • Grated lemon rind (optional)

Combine cherries and preserves in a medium saucepan, and bring to a boil. Reduce heat to medium-low, and simmer 5 minutes. Remove from heat, and cool completely.Combine sugar, juice, and cheese in a large bowl, and beat with a mixer at medium speed until smooth (about 2 minutes). Cover and chill....
