  • 1 cup crème frache
  • ¼ cup ground cinnamon
  • ½ pound parsnips

    • ½ pound Yukon Gold potatoes
    • 3 large egg yolks
    • 1 3-inch piece vanilla bean
    • ½ cup small pearl tapioca
    • ½ cup honey

Bring 3 quarts water to boil in large saucepan. Add tapioca and boil until tapioca is clear, stirring occasionally, about 16 minutes. Drain; rinse under cold water until cool.
