Ingredients

  • 1 cup crème frache*
  • 2 large eggs
  • 3 small to medium blood oranges
  • 2 tablespoons sugar
  • 6 tablespoons whole milk
  • ¼ teaspoon coarse kosher salt
  • 1 ½ teaspoons baking powder
  • + 7 more ingredients
    • 15 tablespoons unbleached all-purpose flour
    • 8 tablespoons unsalted butter
    • 19 tablespoons sugar
    • ¾ teaspoon vanilla extract
    • Ovenproof 10-inch-diameter skillet with 2 ½-inch-high sides
    • 3 tablespoons water
    • 3 tablespoons polenta or coarse yellow cornmeal (preferably stone-ground)
