  • 2 Tbs. plus 1 tsp. canola or olive oil
  • 10 oz. sliced bacon (about 9 strips)
  • 1 medium yellow onion, chopped
  • 2 large eggs
  • 2 large cloves garlic, finely chopped
  • 1 cup whole milk
  • Freshly ground black pepper
  • + 6 more ingredients
    • 1 cup small-diced celery
    • Kosher Salt
    • 2 lb. ground bison
    • 1 Tbs. Worcestershire sauce
    • ¼ cup crumbled blue cheese
    • 4 oz. medium-coarse white bread, such as Italian or French, cut into 2-inch pieces (about 2-½ cups)
