Blue Cheese-Bacon Focaccia
Ingredients
- 1 tablespoon fresh rosemary sprigs
- 2 ounces blue cheese, crumbled (½ cup)
- 5 ounces bacon (about 4 thick-cut strips), cut crosswise into ½" pieces
- 1 cup riced or mashed boiled russet potatoes
- 8 tablespoons extra-virgin olive oil, divided, plus more for brushing
- ½ teaspoon freshly ground black pepper
- 1 tablespoon kosher salt
