Blue Cheese-Bacon Focaccia

Ingredients

  • 1 tablespoon fresh rosemary sprigs
  • 2 ounces blue cheese, crumbled (½ cup)
  • 5 ounces bacon (about 4 thick-cut strips), cut crosswise into ½" pieces
  • 1 cup riced or mashed boiled russet potatoes
  • 8 tablespoons extra-virgin olive oil, divided, plus more for brushing
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon kosher salt

    • 4 ½ cups (or more) all-purpose flour
    • ½ teaspoon honey
    • 2 ¼ teaspoons (1 package) active dry yeast
