Blueberry Blintzes

Ingredients

  • Blintz Crepes:
  • 1 c all-purpose flour
  • 2 eggs
  • 1 c 2% milk
  • pinch salt
  • Melted butter or vegetable oil, for cooking
  • Blueberry Filling:
  • + 8 more ingredients
    • 2 c low-fat cottage cheese or ricotta
    • ½ c low-fat cream cheese or neufchatel cheese
    • 2 c fresh blueberries
    • ¼ c sugar
    • 1 egg, beaten
    • 1 t cinnamon
    • ¼ t nutmeg
    • 2 T butter
