Blueberry Blintzes


  • 6 tablespoon sour cream or plain yogurt (optional)
  • 2 pint blueberries
  • vanilla
  • Cinnamon, to taste
  • salt
  • 2 tablespoon sugar plus more for sprinkling, optional
  • 2 eggs
  • + 3 more ingredients
    • 2 tablespoon melted butter or margarine plus more for brushing pan
    • ½ cup plus 1 tablespoon milk
    • ¾ cup all-purpose unbleached flour

Combine flour, milk, 2 tablespoons melted butter, eggs, 2 tablespoons sugar, salt, pinch cinnamon and vanilla in a blender or a food processor fitted with the metal blade and blend or process for a minute until smooth.
