  • 4 cups blueberries, rinsed, picked over, and drained
  • Generous pinch of freshly grated nutmeg
  • 3 Tbs. fresh lemon juice
  • 1/3 cup packed light brown sugar
  • 1-¼ cups cold ultrapasteurized heavy cream
  • Pinch of salt

In a medium saucepan, combine the blueberries, brown sugar, lemon juice, salt, and nutmeg. Simmer over medium-high heat, stirring occasionally, until the berries have released their juice and burst when lightly pressed with the spoon, about 6 minutes.
