Blueberry Muffin Streusel Cake
Ingredients
- Streusel Topping:
- 1/3 c sugar
- 1/3 c light brown sugar
- ½ c all-purpose flour
- 2 t ground cinnamon
- 1 t vanilla extract
- 3 T butter, softened

- Cake:
- 1 c all-purpose flour
- 1 ½ t baking powder
- ½ c sugar
- ½ c skim milk
- 1 egg
- 2 T canola oil
- 1 c fresh blueberries
To prepare streusel topping: In small bowl, mix together sugar, brown sugar, flour and cinnamon. Cut in vanilla and butter using pastry blender or fork. Reserve 1/2 cup topping and add pecans to remaining topping. To prepare cake: Preheat oven 375F. Coat 9-inch square pan with nonstick cooking...
