Blueberry Muffins with Tropical Streusel Topping

Ingredients

• ¼ c flaked coconut
• 2 T all-purpose flour plus 3/4 cup all-purpose or whole wheat flour
• 2 T light brown sugar plus 1/2 cup light brown sugar
• ½ c chopped walnuts, divided
• 1 t coconut extract, divided
• 4 T canola oil, divided
• 1 c whole-wheat flour or all-purpose flour

  • ¼ t baking soda
  • ½ t ground cinnamon
  • 1 egg
  • 1 egg white
  • ¾ c buttermilk
  • 2 c fresh blueberries
