Bourbon-Bacon Barbecue Sauce
Ingredients
- Freshly ground black pepper
- Salt
- 1 teaspoon ground mustard
- 1 ½ teaspoons smoked paprika
- 2 teaspoons chili powder
- 2 tablespoons dark or robust molasses (not blackstrap)
- 3 tablespoons bourbon

- ½ cup packed dark brown sugar
- ½ cup cider vinegar
- 1 cup ketchup
- 2 medium garlic cloves, finely chopped
- ½ cup finely diced red onion (about ½ small onion)
- ½ cup small-dice bacon (about 2 ounces)
Place bacon in a small saucepan over medium heat and cook, stirring occasionally, until crisp, about 8 minutes. Using a slotted spoon, transfer bacon to a small bowl; set aside.
