Ingredients

  • 4 Tbs. unsalted butter, melted
  • Scant ½ tsp. table salt
  • 1 tsp. pure vanilla extract
  • 1/8 tsp. ground cloves
  • ¼ to ½ cup cold water
  • ¼ cup bourbon
  • Pinch freshly ground black pepper
  • + 12 more ingredients
    • 2 large or 3 medium sweet potatoes (1 ½ lb. total)
    • ¼ tsp. table salt
    • ¾ cup cream
    • ½ cup packed dark brown sugar
    • 1 large egg yolk
    • 3 large eggs
    • 2 oz. (4 Tbs.) unsalted butter, cut into pieces and chilled
    • 6 oz. (1 1/3 cups) all-purpose flour
    • 2 oz. (4 Tbs.) vegetable shortening, cut into pieces and chilled
    • ¼ tsp. freshly grated nutmeg
    • 1 tsp. granulated sugar
    • 1/8 tsp. ground cinnamon

Put the flour, sugar, and salt in a food processor; pulse to combine. Add the butter and shortening; pulse until the mixture resembles coarse cornmeal. Transfer to a mixing bowl.
