Brûléed Squash with Pepitos

Ingredients

  • 3 delicata squashes, cut into halves and seeded
  • 2 T extra-virgin olive oil
  • Salt and pepper
  • 2 T brown sugar
  • 2 T basil, cut into long, thin strips
  • ¼ c pepitos (pumpkin seeds), roasted and salted
  • ¼ c goat cheese, crumbled
