Ingredients

  • 4 onions
  • 4 2-inch-thick meaty crosscut veal shanks (osso buco)
  • 4 tablespoons unsalted butter
  • 2 ½ pounds yellow-fleshed potatoes such as Yukon Gold
  • 6 plum tomatoes
